Peel was founded by two fascinating Edwardsville culinary adventurers, Patrick Thirion and Brandon Case, and is THE place in the area for delicious pizza. Patrick Thiron cut his teeth in culinary school (Sullivan University) in Louisville. Meanwhile, he traveled all over the world and worked in kitchens, hotels, and more to improve his expertise. When he arrived back in Edwardsville, he had three culinary passions Thai, Southern French and Italian cuisine. His co-chef and co-owner Brandon Case had a fascinating rise in the culinary world as well. Case honed in his skill by cooking for the military in a variety of locations around the world, and this allowed him to experience and learn about cooking from different cultures and backgrounds. It also gave Case the experience he needed cooking for people. Military personnel will tell you if your food is good or bad, and Brandon Case passed the test. Together, Patrick and Brandon decided to open Peel, and it’s been a hit ever since.
Peel has a unique menu that offers more than just a delicious variety of mouth-watering wood fired pizza. The menu also includes maple bourbon pork sliders, regular, buffalo, or lobster mac-n-cheese, wood-fired wings (everything from Caribbean jerk to garlic, or buffalo), and different desserts. The alcohol menu is also quite extensive with different kinds of wine, beer, taps, cocktails, and even a variety of Peel brewed beer. Brandon and Patrick have also cultivated an environment of friendly staff and great service.
Peel is the perfect place to visit on your trip to the SW Illinois or St. Louis area. Delicious pizza, wood-fired wings, local beers, and great service…this spot is well worth a visit (or five).
