Since it opened in March, 2024, Ember has been turning heads throughout the Bitterroot Valley. Led by chefs Brandon Dearden and Toby McCracken, the restaurant offers a fine dining experience unique in the state of Montana. Over 90% of their ingredients are locally sourced, something that was particularly important to the chefs and founders, partnering with a ranch in Townsend to ensure the best quality in their steaks. Ember specializes in wood-fired meats and vegetables, including Wagyu steaks, halibut, and more. If this piques your interest, the new restaurant is open Tuesdays through Saturdays from 5pm to 8pm, but if you plan on visiting, make sure you have a reservation, as it is notoriously hard to get a table at Ember.
